 I planted rows marigold seeds around some of the vegetable beds.  If I had to buy the plants, or even the seeds, this many would have been expensive and a frivolous expense.  Since I saved seeds from last year, I have more than I can plant.  It will be nice for the honeybees if they grow.

Most of the squashes and pumpkin plants are in the ground.  So are the okra plants that I started.

The tiny blackberry plants that I started a few months ago are taking off now.  Leaves are nice and dark.

Using Extra Pumpkin and Winter Squash. 1.24.16

We didn't want to waste pumpkin.   Yesterday I prepared one for future use.

Very easy.  Cut pumpkin in half.  Scoop out seeds and their surrounding fibrous material.  The seeds will get roasted later.

Place cut side down on cookie sheet.  Bake in 350 degree oven for one hour.  Let cool onough to handle, then scoop out the soft mash.

For this pumpkin - Rouge vif D'Espampes - which I think is the same as "Cinderella pumpkin" - the pumpkin came out so tender, it did not need to be pureed.  I just stired it up.  When cooled, I measured out 1 cup or 2 cup portions, scooped into vacuum sealer bags, labeled, and sealed up.  These portions are the same size as 1 or 2 cans of canned pumpkin, but much better.  Ning used a batch to make pumpkin bread - excellent!  Winter squash is processed the same way, and for the same recipes - equally delicious.

The bags go into the freezer.  They thaw out fairly quickly if immersed in cold water, or overnight in fridge,

Squashes

 Since I did not know which squashes would do well, I planted multiple varieties.  Pumpkins are just orange round squashes. 

No use growing all one type when it's so easy to sample all sorts.

I did not know the summer would be so hot.  Expecting cool climate, I started the squash plants indoors, and planted when the soil was warm.  In order to keep the soil warm, I did not mulch.   I did not get them all into the ground as quickly as i wanted, and some were delayed.  But most did very well.

All can be cooked in similar ways.  We usually roast them.  Some can be baked to soften, then puree for pies.  My favorite last year was Waltham butternut squash, made into pie.  I do have one of those that is not yet ripe.

I like just looking at them.

The largest was Pink Banana Squash.  18 pounds.

Ning is holding a Pink Banana Squash, and a Long Island Cheese Pumpkin.  Expect some taste testing this winter.

No use saving seeds from these.   Most are cross pollinated, most by Zucchinis which had the most male flowers.  I might grow one or two for novelty but with the cross pollination, none are expected to be true next year.

Still, a squash is a squash.  So I would expect any to be edible, even if they look strange.

The heirloom french marigolds had some atypical plants.  A single yellow - the rest were doubles.  And a taller, looser double red.  That one had more marigold fragrance, looks like a reversion to earlier type.  I am saving seeds from both.  I like the difference.

Only 4 seeds from Ning's beans.  Not much to start a self-saved strain but better than zero seeds.\

Illinois Everbearing Mulberry is a pale green.  Not due to insufficient nitrogen.  It's been that way every year, and in 2 locations.  Other trees nearby are fully green.

Final Seed Order for 2014. Seedsavers.org

It's only Dec 1.  I know how much room I have.  There's not much to do in the kitchen garden.  So I planned for late winter / spring.  Might have bitten off more than I can chew.  Seeds are easy to plant.  The raised beds are in place.
The squashes can go into the wild area, with some compost for food.  Worked for 2013 with Butternut and Zucchinis.  This way I can see which squashes work in my climate and yard.  If they all produce it will be some to give away.  The chickens like them and the orange pumpkin types might enrich the egg yolks.
