Fig Jam. 9.20.18

 Despite the challenges of yellow jackets, and then ants, I harvested a bowl of figs yesterday.  For ants, I usually wrap a 6 inch section of trunk with plastic wrap, then apply Tanglefoot over it to prevent them from climbing.  But had not done that until last week.  Their numbers are greatly reduced now, and there are figs without ants to harvest.

I usually dry extra figs for later use in breads or hot cereal, but this time wanted to make jam.  I make freezer jam, because I have not learned canning.  I also think that canning cooks longer, and I don't know the effect of that on the nutrition.

However, there is cooking with this jam before freezing.  That breaks down the structure of the figs so they mix better with the pectin solution.

I used Sure-Jell, the one for less or no sugar.  The fig recipe still called for what seemed to me like a lot of sugar.  I followed the recipe because it cautions that using less sugar can result in the pectin not jelling.

It's pretty easy.  I used about 4 1/2 cups of figs.  Washed, cut into half, then used food processor to cut them into a chunky mixture.  I didn't puree, because I like chunks of figs in the jam.  That yielded 2 1/2 cups, which is what the recipe called for.

Then placed into sauce pan.  Mixed pectin with water as the recipe in the box described, added the sugar and lemon juice, and brought to a rolling boil while stirring.  Then portioned into  pint size jars, let cool, and froze. 

This actually jelled almost too well.  I might have been able to use less sugar.

The recipe was:

2 1/2 cups chopped figs.
1 cup water.
1 pkg pectin

 1/4 cup lemon juice (3 small lemons)
3 1/2 cups sugar.

I  mixed the pectin with 1 cup cold water to disperse, and heated in microwave for a minute.  Stirred, then stirred into the pan of figs. Added the sugar, then lemon juice.  Brought to rolling boil, frequently stirring.  Then immediately ladle into clean pint jars, apply lids, then let cool before freezing.  The lid is not tightened until it is frozen.

The appearance is nice, reddish jelly.  It was very good stirred into yogurt.
I think next, I'll try the Pomona pectin, which I read does not require sugar, or as much.

 There is so much now from the kitchen garden.  Can't eat it all at once.  I give some away.

Dried fruit from home garden is surprisingly good.  The near-black Hollywood plums are tart and sweet and concentrated plum flavor.  Like fresh ones but more intense.  Nothing like a prune, which is a dried European plum.

The home grown sun dried tomatoes are even better than store bought,  And store bought sun dried tomatoes are pretty good.

They don't have to be Roma tomatoes.  Ning taught me we can dry any kind.

With these fruits, we dry a few days in the sunroom.  During the day it is in the 120s there.  I can use a food dehydrator, but the sunroom works as well with no power.

Then they go into food bags into the freezer.

Freezer Jam.  Finally found instant pectin.  The advantage is, instant pectin does not need to be dissolved.  No water needs to be added.  So the jam is just fruit, some sugar, and pectin.
Today's Harvest.  8.16.15
 For grapes, only 1/2 the recipe amount of sugar is needed.  Maybe not even that much.  This was amazingly good:

2 cups washed grapes.   These were Price grape.
1/3 cup sugar.
2 tablespoons instant pectin.

I wash the grapes. Place them in food processor and chop coarsely.

Then combine the sugar and pectin.  Add to food processor and process until well mixed.

 I leave the seeds intact, and don't worry about chopping the skin too finely.    Grape flavor is highly concentrated in the skin.  Grape seeds are a health food and the crunchiness adds fun to the jam, similar to seeds in figs.
Cornbread with Grape Freezer Jam.  8.16.5
Very good on cornbread with butter.  Use unsweetened corn bread.  Or mixed with plain, homemade yogurt.

Ladle jam into jars.   Any small jar will do.  These keep 1 year in freezer or 1 month in fridge.  The uncooked fruit flavor sings with joy.

Hollywood plums also make excellent plum jam.  Same as grapes, but slice the plums flesh off the seeds.   Leave the skin on the slices.  Use 2 cups, same as grape jam.  Add 1 tablespoon lemon juice.  The rest is same as grapes.  It's almost like candy, sweet and sour and full of undiluted flavor, unlike cooked fruit jams with high fructose corn syrup from the grocery store.

In either case, the jam fills 2 8-oz jars.

Freezer Jam. 7.17.15

Cut up enough plums for 2 cups.

Mix in 1 teaspoon of fruit preservative, vitamin C.
 I made my first batch of plum freezer jam.  Easier than expected and delicious.

I did the same thing with King figs, except chopped them by hand into about 1/2 inch pieces.  That was my first try, and I used 1 cup  of sugar, which was too sweet.
Dissolve 1 1/2 teaspoon low-sugar pectin in 1 cup water.

Heat to boil while stirring.  Boil one minute while stirring.

Mix the fruit with the pectin solution.  Mix in 1/2 cup sugar.


I like to pulse a couple of times in food processor but leave lots of chunks.
Ladle into fruit jars.  I used 4 ounce.

Cap, label, chill or freeze.
